FRESCO FRIDAYS: Basil Pesto Pasta with Grilled Shrimp
Summer is in full swing and while our garden veggies are starting to tucker out, our basil is loving these warmer temperatures so we’re using it in a fresh, homemade pesto in this week’s Fresco Friday recipe.
Whether you've got an herb garden of your own or are simply looking for something seasonal + simple to make for supper, this basil pesto pasta + grilled shrimp is sure to please.

Grilled Shrimp & Pesto Pasta
Ingredients:
- 1 Pound of Jumbo Cooked Shrimp
- 1 Bunch of Fresh Basil
- 3 Cloves of Garlic
- 1/2 Cup of Parmesan Grated
- 1/4 Cup Pine Nuts
- 1 Teaspoon of Sea Salt
- 1 Cup of Olive Oil
- 2 Tablespoons of Butter Melted
- 1 Pound of Cooked Pasta
Process:
For Pesto Sauce:
- Place all the ingredients in a food processor or blender (Basil, Garlic, Pine Nuts, Olive Oil, Salt, & Parmesan). Blend until creamy and smooth. Place dip in a medium bowl or platter & toss well with cooked pasta.
For Shrimp:
- Heat Grill on High. Place Shrimp on skewers and grill until warm with grill marks about 2-3 minute on each side. Brush with butter. Place on pasta.
